Look at this! The cocoa has to be put into the wooden box for fermentation. I need to control the temperature, and I think it’s set now. We call this process "Fili Marsh." The temperature is climbing—34, 36, wow, it’s getting too high, up to 37. It’s very high, and the batteries are working.

Oh, that’s hot! Yeah, it feels very greasy. Now it’s at 41 degrees Celsius.

We've been observing the cacao extraction and harvesting process, as well as the fermentation process. The cacao is covered with banana leaves in wooden boxes. The temperature of the cacao can climb surprisingly high. Just look at how high it climbs! It eventually reached as high as 41 degrees Celsius.

Now we head up to the sun-drying section, which is on the roof of this building. This is where we dry the cacao beans, a process used in most commercially mass-produced products. Just look at the color of these beans. They are dried under the sun for seven days to enhance their aroma.
